Lemon rice is a popular South Indian Rice recipe where the rice is flavoured with lemon juice and is tangy and spicy.The dish is complete meal in it self or it can be eaten with curd, raita or any chutney and is a wonderful way to use leftover rice.
INGREDIENTS FOR LEMON RICE RECIPE
3-4 cups cooked rice
2 table spoons sesame oil
1/2 teaspoon Mustard seeds,1 table spoon Urad Dal( split Black lentil)
1 table spoon Chana Dal(Split Bengal gram)
2 Green Chilli (Slit in half)
3 to 4 Dry Red Chilli
12-15 Curry leaves
1/4 teaspoon Hing
10-15 Peanuts,6-8Cashew Nuts
Salt to taste, 1/2 teaspoon Turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon an aromatic mixture of ground spices (gram masala)
2 table spoons lemon juice
HOW TO MAKE LEMON RICE RECIPE
In a small frying pan heat 1 to 2 tablespoon sesame oil.
Fry peanuts first till crunchy then keep them aside.In the same oil fry cashew till golden then remove and keep them aside.
Now add 1 tablespoon oil in the same pan.Add mustard seeds and let them crackle once mustard seeds crackle add urad dal, chana dal.
Saute till dals are slightly browned.Fry everything at a low flame so that spices are not burn.
Add green chilli, dry red chilli, curry leaves, hing.Mix very well.Cook for 10 seconds.
Add the roasted peanuts, cashew nuts, salt, turmeric powder, garam masala, coriander powder.Mix very well.Cook for 10 seconds.
Add the cooked rice and lemon juice and mix well.Keep the lemon rice covered for the flavours to blend for 4-5 minutes.
