Rajasthan is famous for many delicious delicacies. One of them is Rajasthani Dal Paratha. Preparing Rajasthani Dal Paratha is not too difficult.

Ingredients:-


Semolina, gram dal, oil, salt and red chili powder, coriander powder, garam masala.

Method :-

First of all, keep the gram dal in water for at least 6 hours, and then boil it.

When the lentils have boiled, cool it and grind it in a mixer.

Knead the dough of Semolina. For this, add salt and 2 tablespoons of oil to the flour, before kneading.

Heat 2 tablespoons of oil in a pan, add spread the paste of gram pulse and roast it for at least 2 to 3 minutes.

Mix all the spices in the dal, and let it thicken well.

Allow the dal prepared, to cool. Now put on the frying pan, and as soon as the pulse becomes cold, you make parathas with the dal as fillings.

Now roast the paratha on the pan. Rajasthani Dal Paranthas are ready.

One very popular dish of Rajasthan is Dal Bati. One just can’t talk about Rajasthani food and not talk about Dal Bati. Here’s how it is prepared.


Ingredients

For Dal:

• 1/3 cup gram dal
• 1/3 cup toor dal
• 1/3 cup moong dal
• Red Chili powder: 2 tablespoons
• Turmeric powder: 1 tablespoon
• Coriander powder: 1 spoon
• Garam Masala: 1/2 tablespoon
• Cloves: 4-5
• Cumin: ½ tablespoon
• Bay leaves: 2
• A pinch of asafetida
• A pinch of amchoor
• Tamarind
• Ghee: 1 spoon
• Salt: According to taste.
• Garlic buds: 3-4

For Bati:

• Wheat flour: 3 cups
• Semolina: 2 cups
• Gram flour: 1 cup
• Milk: 1 cup
• Ghee: 2 spoons
• Salt: according to taste.

Method

For Dal:

• Wash the pulses and boil them in pressure cooker.
• In a bowl, mix chillies, turmeric, coriander and garam masala powder in 3 teaspoons of water.
• Take a pan and heat the ghee in it. Add the garlic buds, cumin, asafetida, and fry them well.
• After frying the ingredients, add the mixture of the spices in the pan and cook for some time.
• Add boiled pulses, tamarind, amchoor, and salt.
• Cook for 5-7 minutes.

For Bati:

• Mix all the above mentioned ingredients and knead into a dough.
• Divide the dough in small equal; parts, and make circular balls of it.
• Press these spheres with your palm lightly.
• Cook them in the Bati oven.
• After it is cooked, add ghee to it.
Serve your Dal and Bati hot.
