PIE CRUST. WHY DO SOME PEOPLE PUT VODKA IN THEIR PIE CRUST?

If you’re anything like me, then you have pie crust hanging out in the back of your refrigerator at all times, waiting for just the right recipe to come along and be combined with it. Unfortunately, there are only so many recipes that I know how to make on my own. Most pies call for a premade crust that you can buy in a store or even just sprinkle some vodka into.

Some people add vodka to pie crust because it helps make the dough more tender and flaky. Vodka provides moisture like water but evaporates quickly during baking, so it limits gluten formation. Less gluten means the crust stays soft, light, and flaky instead of becoming tough. It’s a common baking trick to improve texture without changing the flavor.
