Spinach usually is not associated with the delicacies which make your mouth watered at the very sight of it.
Still there are some dishes that can be easily made at home with spinach and yet are not as boring as the usual spinach curry or vegetable. One of such dishes is Spinach and onion fritters (pakoras) with pear and mint chutney.
Ingredients:
For Fritters
• Spinach leaves 1 cup –chopped
• 1 onion –sliced thinly
• 2 cup chick pea flour
• 1 table spoon dried fenugreek leaves
• 1 table spoon ground cumin
• 1 table spoon coriander powder
• Salt and pepper according to taste
• 1 cup yogurt
• ½ cup water
• 2 cup vegetable oil
For spear and mint chutney
• 2 table spoon grape seed oil.
• 1 onion –finely chopped
• 1 table spoon fennel seeds
• 1 table spoon cardamom seeds
• 2 ripe pears –peeled and chopped
• 1 pinch salt
Method:
For Fritters
• Mix and stir spinach, onion, spices, chick pea flour, yogurt, water, and salt in a bowl, until the mixture becomes even.
• Heat oil in a deep frying pan.
• Slowly pour the mixture into the hot oil with a spoon. Deep fry until the fritters turn light brown.
• Take the fritters out and drain the extra oil from them by spreading them on a paper.
Your fritters or pakoras are ready.
For spear and mint chutney
• Heat oil in a pan.
• Add chopped onion in the hot oil. When the onion gets soft, add fennel seeds and cardamom seeds.
• Mix the spear and mint leaves with the onion mixture. Season it with salt. Puree the chutney well.
Your chutney is ready to be enjoyed with spinach fritters.
